These young Lentinula edodes — better known as baby shiitake — are harvested early for their tender texture and concentrated umami. Unlike larger, more mature shiitake caps, baby shiitakes are fully intact with short, delicate stems and a denser, meatier bite. When dried, their savory profile becomes even deeper, developing smoky, earthy notes with hints of caramel and soy.
