Agaricus blazei — also known as Himematsutake, Almond Mushroom, or the “Mushroom of the Sun” — is both a gourmet ingredient and a celebrated medicinal species. With a naturally sweet, nutty aroma (often compared to almonds) and a rich, meaty depth when cooked, it adds intensity and character to broths, stews, and sauces.
Traditionally used in Brazilian and Japanese folk medicine, blazei is packed with beta-glucans and other bioactive compounds studied for their potential immune-modulating and anti-inflammatory effects. It’s been associated with overall immune support, metabolic balance, and gut health — making it a rare mushroom that excels in both the kitchen and the apothecary.

Rehydration Instructions:
Soak in warm water for 20–30 minutes. Strain and reserve the soaking liquid — it's loaded with earthy, almond-like flavor. Rinse gently before cooking.
